What is the hardest trait to evaluate throughout all species?

Every species has its quirks. I think fat cover is a trait that I see a lot of inexperienced evaluators struggle with across species.
What I mean by that is being able to tell whether an animal is “fresh” or “stale”.
To me a fresh animal has optimized their fat or body condition and a stale animal has gone past that point and their body condition has started to become a detriment to their balance and look.
As an inexperienced evaluator that can be a harder trait to distinguish.
